Blue Dot Restaurant Equipment Heating System . . .
Unlike other energy sources, infra-red has some unique characteristics make it ideal for broiling.  It travels at the speed of light and reflects light, so it's fast.  And, its power is concentrated.  Fast, 90 second preheat with no waiting between loads.  It does not heat the air through which it travels, so it's more efficient and broiling stations are cooler - important pluses for fast, high production broiling.
Blue Dot Restaurant Equipment Capabilities . . .
The intensive infra-red energy quickly penetrates meat, locking in natural juices and reducing broiling time as much as 50%.  Broil in half the time with 1/3 less gas for fuel savings of up to 66% over ordinary broilers.  In just 90 seconds, the ceramic time burner becomes glowing red emitting intense infra-red energy at peak efficiency - no waiting for the broiler to warm up.  Because only freshly filtered primary air is fed to the burners by a 1/10 hp dual wheel blower, broiling smoke and vapors won't affect broiling performance.  No matter how heavy the load or how many loads are broiled, it continues to broil at peak efficiency.

Broil 1" thick steaks to medium rare in just 4-4-1/2 minutes, or quarter-pound hamburgers in just 1-1/2 minutes.  Economical to operate - about 10 cents per hour.

Body, back, sides and top are insulated with rock wool.  Stainless steel front and legs are standard.  Remainder of unit has black baked-on exterior.  (Specify stainless steel top, sides and back if desired).

Schwank infra-red broilers have a total rating of 78,000 BTU per deck.  The pilot lighters are constant burning.  Unit is also equipped with a 110 volt, 60 cycle blower for pressurized primary air, and built-in solenoid control.  Air is filtered by a 9-1/2" x 19-1/2" washable metal mesh air filter.
